The Den’s apple pie

Did you know that Apples have been more effective in keeping people awake than coffee. So why not trade your espresso martini for one of the Den’s apple pie cocktails!
Ingredients
Half a caramelised green apple
*brown sugar, dark rum and cinnamon for the caramelisation
20ml of Havana Club Blanco
20ml of Bacardi 8 spiced rum
15 ml of maple syrup
15 ml lime juice
Method
Caramelise the apple with dark rum and brown sugar while adding cinnamon to the top of the apple. Combine all the ingredients including the caramelised apple in a Boston shaker, shake well. Double strain the mixture in a rocks glass with and serve with crushed ice. Garnish the cocktail with an apple fan, maraschino cherry and cinnamon stick.

For $120 per person, join our bar manager for this interactive class where participants will learn the art of making cocktails including an appreciation for the ingredients that make each cocktail. Summer Cocktail - Penny Lane

Here at The Den we like to mix things up! Pun intended! We enjoy our little nook under The Atlantic Restaurant and always enjoy creating a refreshing drink to compliment each season. When asked for a recipe that suits summer, we could not think of a better refresher than Penny Lane. This cool calm and collected cocktail is the perfect melody of summer, served in a tall martini glass. Summer at The Den is always shaken, not stirred.
Penny Lane
Ingredients
45 millilitres of Wyborowa vodka
15 millilitres of Aperol
10 millilitres of passionfruit
30 millilitres of pineapple juice
Dash of lime
Method
Pour the vodka, Aperol, passionfruit and pineapple juice into a cocktail shaker. Shake vigorously for 10 seconds and strain into a martini glass. To garnish place on the side of the martini glass a dehydrated pinapple ring.

This cocktail is named after a regular customer, Michael as it is his favourite drink!
Gin, elderflower liqueur, lemon, lime, sugar, milk, egg white, peach bitters and soda water make up this tantalising cocktail.

Purple Popper Cobbler
Dry and sweet, thick yet fruity, opposites attract in the Purple Popper Cobbler, born of the old cobbler days when drinks were simple the drink is designed to be fun all year around. Served in a cocktail shaker at the table the cobbler is supposed to be spoken about.
Cohiba No 23
Rum and cigars, a match made in heaven.
An anjeo rum infused with a CohibaSiglo 1V that then gets combined with freshly blitzed apple juice to create a full bodied liquid that is served in a balloon glass in a cigar humidor to the table, just as if you were ordering a cigar!
Settle in and enjoy!
